This is National Butchers' Week - running from March 12 to 18, 2018 - with Brigg part of the celebrations.
It is being promoted by the Meat Trade Journal, and Brigg Blog thinks it an ideal time to pinpoint purveyors of prime cuts.
We are thinking, in particular, of Mundey's, Newell's, Spelman's and Barnard's.
Older followers of our Blog will recall Watson's, Turner's, Waters and Dewhurst's, to name but a few.
The Little Butchery - the short walkway linking Wrawby Street and Bigby Street, pictured above - recalls links to the meat trade long ago, while Elwes Street was once known as The Butchery.
In June 2016 we reported how a well-known butchery family in Brigg had signed off and thanked customers on their final day.
Since then the business has changed hands and is still trading today, under new management.
Turner's was a renowned family-run pork butcher on Queen Street.

Butcher's hook (shortened to Butcher's) is Cockney rhyming slang for look, if you didn't know.
